    芒果冰淇淋

     

    做芒果gelato因不需要熬custard,所以很簡單。我是根據The Ice Cream Book (ISBN:1-84309-991-8)這書的食譜稍做更改。因為這書英國人寫的,有些“英文”的用字我看不太懂。

    設備:Cuisinart Ice Cream Maker ICE-20

    材料:2.0 oz的細砂糖;18oz的熟芒果肉;1/2 Teaspoonlemonlime汁;8 oz Heavy Cream

      

    芒果的好壞決定勝負。現在市面上要買到又香又甜的芒果不太容易,大多是看起來很好看,但聞不出芒果的香味。如果是在Costco買的紅芒果,大概是三個。但Costco賣的芒果都比較生,需要放個幾天等它軟。

    2.0 oz的糖是個參考量。第一次做可以多放一點到2.5 oz。如果覺得過甜,下次再慢慢減量。

    Freezer Bowl放在冷凍庫﹝Freezer﹞至少10小時,以過夜最好。因為晚上沒有人開關冰箱,冷凍力最足。

    把熟芒果肉放在Food Processor裡與糖一起打成芒果漿。

    將芒果漿放入已冰凍好的Freezer Bowl裡轉個10分鐘。芒果漿會變得很稠。這時再倒入Lemon/Lime汁以及Heavy Cream,繼續轉1015分鐘。會看到冰淇淋體積膨脹很多。如果是用1.5 qtFreezer bowl的話,冰淇淋會膨脹到上面。

    將做好的冰淇淋挖出來放進容器,置於冰庫裡冷凍過夜,第二天就可以吃了。

    如果喜歡冰淇淋裡有大塊一點果肉的話,將多餘碎果肉在將做好的冰淇淋挖出來放進容器時一起混入就可以了。Marble Slab的做法也是類似這樣。

    我在刮芒果肉之前,都會先把芒果放在冰箱冷藏室裡一天。因為這樣刮出來的芒果肉是低溫的。如果打成芒果漿後再放入冰箱降溫,我覺得因長時間與空氣接觸,不是新鮮水果漿了。

    連我都覺得很容易,應該是很簡單吧!
